Almond Cookies

Makes ~25-30 cookies

Ingredients
1 lb.  Almonds ground to a powder 
Egg whites 
2 1/4 cups  Powdered sugar 
1 tsp.  Baking powder 

Directions

  1. Heat oven to 375°F.
  2. Whip up egg whites to peaks.
  3. Fold in powdered sugar and baking powder.
  4. Fold in almonds.
  5. Line a heavy cooking pan with parchment paper.
  6. Put a tablespoon of the batter on the pan for each cookie. (6-8 cookies per sheet)
  7. Cook for 10-12 minutes. Replace the parchment paper every so often.
